Vegetarian Falafel Wraps

Ingredients
  

  • 4 spinach herb wraps
  • 2 cups hummus
  • 4 cups arugula
  • 12 falafel
  • 12 ounces halloumi cheese
  • ½ English cucumber, thinly sliced
  • 1 cup carrot, shredded
  • 1 large heirloom tomato, sliced

Method
 

  1. Grill halloumi for 2 minutes on each side or until you have golden grill marks on each side.
  2. Bake falafel according to package.
  3. Spread ½ cup hummus on each wrap. Top with 1 cup arugula, 3 falafel, slices of halloumi cheese, slices of tomato and cucumber and ¼ cup of shredded carrot.
  4. Roll each wrap, tucking in the sides as you roll. Secure each side with a toothpick and slice in half.
  5. Enjoy!
