Spicy Queso Dip

Ingredients
  

  • 1 lb. Velvetta cheese, cut into cubes
  • ¼ cup whole milk
  • ½ lb. ground chorizo
  • ½ cup diced onion
  • ½ small jalapeno, thinly sliced
  • ¼ cup salsa
  • 1 Roma tomato, diced
  • tortilla chips
  • cilantro (if desired)

Method
 

  1. In skillet, brown chorizo and drain excess fat.
  2. Add diced onion and cook until transparent (around 2 minutes).
  3. Add jalapeno, salsa, milk and Velveeta cheese cubes.
  4. Cook on low heat, stirring constantly, until cheese is completely melted.
  5. Pour dip into serving dish. Top with diced tomatoes and cilantro.
  6. Serve with tortilla chips. Enjoy!

Notes

This queso is best served in a small crock pot or fondue pot to keep the cheese melted.
