Shuck ears of corn, leaving the leaves pulled back and remove all silks.
Place ears of corn vertically in a pot of boiling water for 2 minutes. Drain.
In a small bowl, combine mayonnaise, garlic powder, salt and pepper. Set aside.
Break apart cotija cheese with a fork until it's in a fine crumble. Set aside.
Grill ears of corn using a grill or grill pan. Rotate until all sides have charred kernels.
Spread aioli on all sides of each earn of corn and then roll in cotija cheese.
To serve, sprinkle with chopped cilantro, either paprika or chili powder and a squeeze of lime juice.
