Broccoli Salad

Ingredients
  

  • 6 cups broccoli florets
  • ½ cup dried cranberries
  • cup red onion, chopped
  • cup cooked, chopped bacon (approximately 6 slices)
  • cup walnuts, chopped
  • cup cheddar cheese, cut into small cubes
  • 2 tbsp. scallion greens, sliced
  • ¾ cup mayonnaise
  • 2 tbsp. white vinegar
  • 3 tbsp. sugar
  • ¼ tsp. salt
  • ¼ tsp. ground black pepper

Method
 

  1. In small mixing bowl, combine mayonnaise, sugar, vinegar, salt & pepper. Set aside.
  2. In large bowl, combine broccoli, dried cranberries, walnuts, scallions, cheddar cheese, bacon & onion.
  3. Pour sauce over salad ingredients. Stir to combine.
  4. Cover & refrigerate for 1 hour before serving.
  5. Enjoy!
