I can spend hours wandering through all of the food stalls and checking out all of the small businesses.
Although I’ve loved all the food I’ve had at this market, the falafel wrap is by far my favorite!
Filled with grilled halloumi, crispy falafel, silky smooth hummus and plenty of fresh vegetables, you will crave this wrap time and time again.

Both the halloumi and falafel can be found at Trader Joe’s or in most supermarkets.
Halloumi is a goat/sheeps milk cheese similar to mozzarella. It’s high melting point makes it perfect for grilling or frying because it holds up well to the heat.
Homemade falafel are delicious but to save myself some time, I purchased frozen falafel and cooked them according to the packaging.
I found this beet hummus at Whole Foods and it is delicious but just about any flavor will work with this recipe!
4 spinach & herb wraps
2 cups hummus (I used beet hummus)
4 cups arugula
12 falafel
12 ounces halloumi cheese
1/2 English cucumber, thinly sliced
1 cup shredded carrot
1 large heirloom tomato, sliced
Cut halloumi cheese into slices and grill on outdoor grill or on grill pan for two minutes on each side or until you have golden brown grill marks.
Cook falafel according to directions on package.
Spread 1/2 cup of hummus onto each wrap.
Top each wrap with 1/2 cup arugula, 3 falafel, a few slices of halloumi, slices of tomato and cucumber and 1/4 cup carrot slices.
Roll up each wrap, tucking in the sides as you roll. Cut each wrap in half and hold together using toothpicks.
