Nothing says vacation like a piña colada. They remind me of days spent laying on the beach and enjoying the sunshine. I like to make these pina colada spritzer cocktails at home for a lighter version of this delicious cocktail!

The bright, fresh flavors of pineapple and coconut are perfect for a summer BBQ or days laying by the pool.
This version is served on the rocks but you could always blend it for a frozen version.
When making a cocktail like this, it’s important to make sure that the glass is filled to the top with ice. The colder the better to make this drink extra refreshing.
Adding the lime club soda keeps it light. I like to top the cocktail off with a little of the lime club soda after shaking the other ingredients. Adding it at the end keeps the carbonation.
To make this non-alcoholic, simply omit the rum. All of the other ingredients stay the same.
To garnish, float an orchid, a pineapple leaf or a skewer of pineapple and maraschino cherries!
Rum – I used coconut rum in this recipe but you can use regular or pineapple flavored rum too. If you are wanting to make it stronger, you could also add a floater of dark rum to the top.
Pineapple Juice – Because you don’t need a lot for this recipe, I like to keep these smaller cans on hand. I find that the Dole pineapple juice has the best flavor.
Cream of Coconut – Most grocery stores carry this in the section that has cocktail mixers like margarita and daiquiri mixers. This is thickened, sweetened coconut milk that is perfect for making tropical cocktails.
Lime Club Soda – Any brand will work for this and if you don’t like lime flavor you could always use plain.
