St. Patrick’s Day Snack Boards

If you are looking for a fun dinner this upcoming St. Patrick’s Day, give these St. Patrick’s Day snack boards a try!

These snack boards take many of the traditional foods eaten on St. Patrick’s Day and turn them into a fun, interactive dinner. Everyone gets to have a little variety of their favorite things!

Our one year old may or may not have used the brownies to dip into the ranch…but at least she was eating something?

What You Will Need

I made this dinner snack board with a mix of hot and cold items. The warm beer cheese dip was perfect for the soft pretzels, sausage and lightly steamed vegetables (broccoli, brussel sprouts, asparagus).

I used potato latkes and toasted pumpernickel bread to make mini open faced corned beef and swiss sandwiches. I had honey Dijon mustard and thousand island dressing for these.

There were also pretzel bites, kettle cooked chips, salami slices and mustard cheese. We dipped the green peppers and cucumber slices into the ranch veggie dip!

How to Make St. Patrick’s Day Snack Boards

I begin by spacing out the bowls on the plate.

Next, I placed a thin layer of arugula on the platter for some greenery.

After this, I begin placing the cold food items on the platter.

Once all of the cold food items have been placed, add the hot foods just prior to serving.

Fill in any remaining open spaces with more arugula, chips or pretzels.

Enjoy!

Dessert Board

For the dessert plate I used brownies, Irish toffee cake, shamrock shortbread cookies, chocolate truffles, grapes and various gold wrapped candies.

I didn’t want to do much baking and I was lucky to find the Irish toffee cake and shamrock cookies at World Market.

We also had St. Patrick’s themed donuts from Krispy Kreme!

We were all stuffed after this spread and it was a new and exciting way to spend St. Patrick’s Day!
