If there is pork belly on a menu, there is a 100% chance that I am going to order it. One of my favorites? Pork belly bao. Luckily, these pork belly bao are so easy to make at home and are absolutely delicious!

The soft and fluffy bao buns are the perfect vector for the salty pork belly and tangy hoisin. The cucumber, cilantro and scallions freshen it all up. These bao buns are sure to be a hit whether you make them for an ordinary dinner or for a gathering!
All of the ingredients can be arranged on a platter for guests to assemble on their own or can be pre-assembled for easy eating!

8-10 bao buns
12 oz. pork belly, sliced into 8-10 pieces
1/2 English cucumber, thinly sliced
Cilantro leaves
2 scallions, thinly sliced
1/4 cup hoisin sauce
1/4 cup spicy mayonnaise
Bao buns can be found at most Asian food markets (located in the freezer section). They are also called steamed sandwich buns. I purchase mine at my local 99 Ranch Market.
Homemade pork belly is absolutely delicious but can be time consuming to cook properly. For this recipe, I use the pork belly from Trader Joe’s. The pork belly is precooked, making it really easy to work with!
On a large platter, arrange chopped scallions, cilantro leaves and cucumber slices. Next, place small dishes of both hoisin sauce and spicy mayo on the platter. Set platter aside.
In large skillet, sear slices of pork belly over medium high heat until each side is golden brown. Place slices on a paper towel to absorb extra oil.
Cook buns according to packaging. For example, the bao buns that I normally purchase are wrapped in wet paper towel and then microwaved for a short amount of time.
To serve, place a slice of pork belly in each bun and line up on platter.
To eat, place a few cilantro leaves, scallions and sliced cucumbers in each bun with the pork belly. Drizzle with hoisin sauce and spicy mayonnaise.
