Although I normally think of margaritas as the perfect accompaniment for a Mexican meal, sometimes it’s nice to shake things up a bit.
The solution, a Paloma! This Paloma cocktail recipe is delicious!

When in Mexico, you may find a simple Paloma made with tequila and grapefruit soda such as Squirt or Jarritos Grapefruit or even an elevated Paloma with agave syrup and grapefruit rind.
For my version of this popular Mexican cocktail, I use grapefruit juice and tequila for a bright, fresh, citrusy drink. It’s a great addition to any spring menu and would be perfect for a brunch cocktail.

The mild taste of blanco or silver tequila works best for this cocktail but resposado will also works if that’s what you have!
The amount of simple syrup you add will depend on the grapefruit juice and soda that you are using. I like to use the Trader Joe’s 100% grapefruit juice that does not have any added sugar. Because it’s quite tart, I add a little extra simple syrup to make it sweeter.
If you are using a juice that has added sugar, simply adjust the amount of simple syrup you use to make it your desired sweetness. This also holds true for the soda that you use. Plain club soda will require a little more simple syrup than if you are using grapefruit flavored soda.
2 ounces tequila, blanco preferred
1.5 ounces grapefruit juice
2 ounces club soda or grapefruit flavored soda (such as Squirt or Jarritos)
1-2 teaspoons simple syrup
3 lime wedges
kosher salt

Use a slice of lime to wet the rim of your serving glass. Turn the rim into kosher salt to coat. Fill with ice and set aside.
In a cocktail shaker filled with ice, combine tequila, the juice of you lime wedges, grapefruit juice and simple syrup. Shake until ice crystals are beginning to form in the cocktail.
Strain your cocktail over the ice in your serving glass.
Top off with club soda or grapefruit flavored soda and garnish with wedge of lime or grapefruit.
