Light, Refreshing Mojito Cocktail Recipe

Nothing reminds me of vacation more than enjoying the sunshine with a mojito in hand. This light, refreshing mojito cocktail is the perfect compliment to any summer meal!

Lime and mint are the perfect, fresh combination for this cocktail and the club soda keeps it light.

There are so many variations of this cocktail! Just add your favorite soft, easy to muddle fruit. Some of the best fruits to use are strawberries, raspberries, blueberries, watermelon, passion fruit or even kiwi!

Although some people like to use simple syrup when making a mojito, I prefer sugar. The coarseness of the sugar helps break down the lime and mint to release more flavor into the cocktail.

What You Will Need For A Mojito

8 mint leaves

1/2 of a lime, cut into wedges

1 tsp. sugar

2 ounces white rum

club soda

How to Make a Mojito

In a cocktail shaker or sturdy glass, add lime wedges, mint leaves and sugar. Muddle the ingredients together until most of the juice has been released from the lime wedges. Add rum.

Fill your serving glass with ice. Pour your muddled ingredients over the ice.

Top with club soda.

Garnish with lime wedges, mint leaves or fruit.

Coconut Mojito

Instead of plain rum, substitute coconut rum such as Parrot Bay or Malibu. I also like to garnish the cocktail with pieces of fresh coconut.

Blackberry Mojito

Add 4-5 blackberries into your cocktail shaker when muddling your lime and mint leaves.

Passion Fruit Mojito

This drink brings me right back to my trip to Panama. I absolutely love passion fruit and, lucky for me, so does Panama. I had it in some way, shape or form every breakfast, lunch and dinner (and happy hour)!

After muddling your lime and mint together, add 1-2 tablespoons of passion fruit pulp into the mixture. I like to use the Goya Passion Fruit Pulp (found in the freezer section). It is unsweetened and is quite tart so I normally add an additional 1/2 tsp. of sugar when making this version. Garnish with fresh or dried passion fruit!

Kiwi Mojito

When muddling your lime and mint leaves, add 1/4 of a peeled kiwi or 4-5 mini whole kiwi. Garnish with a slice of kiwi.
