Homemade Ricotta Toasts with Spring Peas and Lemon

The bright, freshness of the spring peas and the lemon zest are the perfect combination to top off the creamy, homemade ricotta and crispy baguette.

This recipe is great for a spring brunch!

Fresh peas are great for this recipe if you are able to find them but frozen peas work just as well.

What You Will Need

8oz. fresh or frozen peas

1 tbsp. fresh lemon juice

2 tbsp. olive oil

1 tsp. lemon zest

1 tbsp. fresh mint leaves, julienned

1/4 tsp. black pepper

1/2 tsp. kosher salt

lemon zest and pea shoots for garnish

1 baguette

1 homemade ricotta recipe (see below)

How to Make Ricotta Toasts With Peas and Lemon

Bring a pot of water to a boil.

Add peas and cook for 1 – 2 minutes or until peas are tender and still bright green.

Drain peas in a colander and rinse with cold water to stop the cooking process. Set aside.

In medium mixing bowl, combine olive oil, lemon juice, lemon zest, julienned mint leaves, salt and pepper.

Toss the peas in the dressing until coated.

To serve, place peas in a small serving dish on a platter along with baguette toasts and homemade ricotta. Garnish with fresh pea shoots.
