Have you ever tried a Hawaiian loco moco garbage plates? These were my favorite thing to eat on my trip to Maui so you know I had to create them when I got home too!

Different cities across the continental U.S. also have their own version of a garbage plate. Rochester, New York is probably the most popular.
Here you choose from a number of different items including home fries, macaroni salad, baked beans, hot dogs, grilled cheese, hamburgers, chicken tenders and top it all off with meat sauce, onions and mustard.
It may seem like an odd combination but this dish was probably my favorite thing that I ate when we were in Maui.

This is a popular comfort food dish that originated in Hilo, Hawaii. You will find it on many lunch menus throughout the islands with many different variations.
Although it is best when using both rice and potato macaroni salad, feel free to use just rice if you would like.
ground beef
cooked white rice
Hawaiian potato & macaroni salad (click here for my recipe)
onion
butter
flour
beef bouillon
eggs
scallions
Form the ground beef into four patties. Season both sides with salt and pepper. I prefer to use a more lean ground beef for this recipe to prevent the patties from shrinking too much while cooking.
Cook the patties in a cast iron pan over medium high heat, flipping half way through. Cook until they reach your desired doneness. Remove from pan and set aside. You can cover them to keep them warm or put them back in the gravy before serving to warm.
In the same pan, add butter and onion. Cook over medium low heat for five minutes or until onions are transparent. Stir in flour.
Add bouillon cube and water to onion mixture. Stir until smooth. Bring to a slow boil and cook for about ten minutes or until thickened.
While sauce is thickening, cook eggs in a nonstick skillet. Traditionally they are served sunny side up or over easy but you could scramble them if you prefer.
On each plate, place a large serving of white rice next to a large serving of Hawaiian Potato Macaroni Salad. Top with one of the hamburger patties and one of the cooked eggs. Pour some of the pan sauce over the dish and top with scallions.

This dish is a comfort food classic!
If you would like to add mushrooms to the gravy, slice them and add them to the pan when you are cooking the onions.
This is a great way to use up leftover hamburgers from a BBQ!
Some of the variations that I have seen include using fried rice instead of white rice, adding Kalua pork, adding crispy fried onions on top or even taking all of the ingredients and piling them on to a hamburger bun!
