If you are looking to add a little fanciness to your next dinner party, these grilled lamb chops with pesto are it! Cooking lamb may seem daunting at first but it’s actually really easy. Grilled to a perfect medium temperature and topped with a fresh pesto, you are bound to impress your dinner guests!

This recipe is my take on a dish I had while visiting Disney World in Florida one year.
If you have ever had the chance to visit Disney World when they are having the Food & Wine Festival at Epcot, you may have seen these at the Australia pavilion. I’ve been lucky enough to attend this event a few times and I always make sure to get these!
Although their recipe changes a bit from year to year, they are typically a grilled lamb chop topped with pesto and potato chip crumbs. It may seem weird at first, but the salty crunchy chips go perfectly with the lamp chops!

1 1/2 lbs. lamb chops
2 garlic cloves, minced
2 twigs of rosemary
4 tbsp. olive oil
salt & pepper
1/3 cup pesto (click here for recipe)
1/2 cup kettle cooked potato chips, broken into crumbs

Feel free to buy store bought pesto if you aren’t wanting to make your own! There are plenty of good, fresh pesto options in most grocery stores.
Begin by marinating your lamb chops. In a shallow dish, combine olive oil, minced garlic, salt, pepper and twigs of rosemary. Stir to combine.
Place lamb chops in mixture, making sure to coat all sides.
Cover tightly and allow to marinate in the fridge for at least 2 hours.
Grill lamb chops on high heat until you have reached your desired doneness. I typically go for medium (internal temperature of about 135 degrees).
Remove from grill and allow to rest.
To serve, drizzle with pesto and top with potato sticks.
