Fresh & Easy Salad Ideas

Whether it be trying to eat a little bit healthier or looking for light & fresh dinner ideas, salads are a pretty common meal in our household. Here are some of my fresh & easy salad ideas.

These salad ideas will help you put together a healthy and delicious lunch or dinner!

From classic salads that we all know and love, to some fresh, new salad ideas, check out some of our family favorites!

Cobb

This version of cobb salad is typically referred to as a “California Cobb”. I love the mix of the grilled vegetables alongside the ingredients that you typical find on cobb salads.

For this salad, I top romaine with diced avocado, tomato, blue cheese, rotisserie chicken breast, grilled asparagus & corn, radishes, egg and bacon. The whole salad is finished with a delicious homemade blue cheese dressing.

I like to line the ingredients up on top of the romaine too! Not only does separating the items make the salad look a little fancier, this also allows people to choose the toppings that they like the best when they are serving themselves.

Want to make washing lettuce a little easier? A kitchen item that we use all of the time, is this salad spinner. This is a kitchen gadget that has probably gotten more use out of it than all of the others. We have had it for years and it still works perfectly!

Greek

For this salad, I use both romaine (for the crunch) and spring mix as the base. I top the lettuce with tomato, olives, English cucumber, red onion, feta cheese and grilled chicken skewers.

I like to keep the dressing simple, using just red wine vinegar, olive oil, oregano, salt and pepper.

To make it a little more filling, I like to serve pita wedges on the side too!

Antipasto

Whether you make this salad to go along with a delicious Italian feast or to be eaten on its own, you really can’t go wrong with antipasto.

Here, I topped romaine and spring mix with all of the favorites!

I used marinated artichoke hearts, olives, tomatoes, cucumbers, and peppers (a mixture of both banana peppers and sweet peppers).

To keep from having to buy a jar of each, check out the olive bar in your local supermarket. I like to get a small container and fill with the artichoke hearts, olives and peppers!

Next, I used ham, salami, provolone, prosciutto and burrata. Top the entire salad with your favorite Italian dressing!

I like to serve it with crunchy breadsticks on the side too.

Wedge

I find that most people either love Wedge salad or hate it. There is rarely an in between. For me, I love it! It reminds me of being at a New York steakhouse.

Probably one of the easiest salads to make, all you’ll need is a wedge of iceberg lettuce, tomatoes, sliced red onions, crumbled bacon, blue cheese crumbles and a really good blue cheese dressing to top it all off!

Nicoise

I’ve had this salad countless times when in Paris and it is delicious every time. This salad is most often made with tuna, but in this version I used poached salmon.

Here I started with fresh kale as a base and then topped it with the poached salmon, tomatoes, avocado, olives, radishes, hard boiled eggs, cucumbers, lightly steamed green beans and potatoes.

For the dressing, a vinaigrette made with mustard is perfect.

Caprese

The best part about this caprese – the crispy prosciutto of course!

I like to top spring mix with sliced tomatoes (heirloom preferably), burrata cheese and pieces of crispy prosciutto. I top the whole salad with a high quality extra virgin olive oil, balsamic glaze, salt and pepper.

To make the crispy prosciutto, I place ripped pieces on a parchment paper lined baking sheet. Bake in the oven at 375 degrees for about 15 minutes. It’s that easy and it provides a great crunch to the salad.

Breadsticks on the side never hurt either.

Farro

Although this is a great fall salad, it really can be enjoyed anytime throughout the year.

A mix of farro, arugula, pecans, red onion and gorgonzola crumbles are tossed with a maple & mustard vinaigrette.

The salad is topped with a seared pear and it is perfection.
