Cheese Tortellini with Vodka Sauce

When I was growing up, there was a restaurant in my hometown that had a pasta on their menu called Chicken Tortellini. I ordered it every single time I ate there. Without fail. This delicious recipe has cheese tortellini in a vodka sauce with sautéed chicken, peas and sun dried tomatoes.

This cheese tortellini with vodka sauce recipe is my take on this favorite.

What You Will Need

20 ounces cheese tortellini (2 packages from Trader Joe’s)

2 1/2 cups of vodka sauce (click here for my recipe)

1 large chicken breast, cut into strips

1 tbsp. olive oil

1/3 cup frozen peas

1/3 cup sundried tomatoes

2 scallions, thinly sliced

Parmesan cheese

I like to use the fresh cheese tortellini from the refrigerated section at Trader Joe’s but frozen cheese tortellini work well too.

Frozen peas are great for this recipe because they are already blanched prior to freezing. Adding them at the very end allows them to just heat through while still being fresh and bright green.

How To Make

Bring a large pot of salted water to a boil.

Add olive oil to a large sauté pan over medium to medium high heat. Sauté chicken strips until golden brown on each side. Remove from pan. Set aside.

Add vodka sauce to the same sauté pan and bring to a simmer over medium heat.

Cook cheese tortellini according to their packaging in salted water. Once cooked, drain in a colander.

Add sundried tomatoes, cooked chicken strips, peas and cheese tortellini into the pan with vodka sauce.

To serve, portion your pasta on your serving plates. Sprinkle with grated parmesan cheese and scallions.
