One of the things that I look forward to the most when visiting New Orleans is a breakfast at Stanley. This fun restaurant is located right in Jackson Square and brings together the best of New Orleans – good food, good music and that southern hospitality. Although I have had so many of the items on their menu, they make some of the best Bananas Foster French Toast.

Bananas Foster is a famous dessert in New Orleans so why not make it into a breakfast food too? This French toast is topped with a sweet and sticky sauce with bananas, French vanilla ice cream and praline pecans.
I’m warning you, if you don’t like a sweet breakfast, this isn’t for you.

French Bread
Eggs
Whole Milk
Vanilla
Butter
Brown Sugar
Dark or Spiced Rum
Cinnamon
Bananas
Vanilla Bean Ice Cream
Praline Pecans
Typically, bananas foster is made with dark rum. If you don’t have on hand, spiced rum works well too!
The bananas will break down a little when cooking. Make sure to slice them thick enough so they don’t completely melt into your sauce!
The praline pecans from Trader Joes are AMAZING and work perfectly for this dish. If you can’t find them, candied pecans or walnuts work too!
In small mixing bowl, combine eggs, milk and 1 tsp. vanilla. Beat eggs until everything is smooth.
Using a non-stick pan, melt 1 tbsp. butter over medium to medium low heat.
Dip each slice of bread into egg mixture and then onto nonstick pan. Cook on each side until golden brown. Remove from pan and set aside.
Using the same pan, melt remaining butter. Stir in brown sugar, cinnamon, vanilla and rum. Once bubbling, add slices of bananas. Cook bananas on each side for 2 minutes.
To serve, stack slices of french toast on serving plate. Pour bananas and sauce on top of french toast. Add a scoop of ice cream and sprinkle with praline pecans.
